1 Pound Penne Pasta or Large Elbow Pasta
3 Cups Whole Milk
2 Cups Half & Half
1 Tablespoon Butter
2 Tablespoons Extra Virgin Olive Oil
¼ Cup Onion, diced
1 Tablespoon Fresh Thyme, chopped
1 to 2 Cloves Fresh Garlic, finely minced
3 Level Tablespoons All Purpose Flour
To Taste Kosher Salt
To Taste Black Pepper

To Taste or 1 to 2 Tablespoons Grand Diamond All Purpose Seasoning
To Taste or 2 to 3 Teaspoons Hot Sauce or Tabasco
1 to 2 Teaspoons Liquid Crab Boil, (optional) (careful, it can be spicy but it adds a nice seafood flavor)
3 Cups (about 12 Ounces) Gouda Cheese or Monterey Jack Cheese , grated
3 Cups (about 8 Ounces) Muenster Cheese or Mild Cheddar Cheese, grated
1 Cup (a little less than 4 Ounces) Gruyere Cheese, grated
1 Pound Shrimp, raw, deveined, tail removed, Size 14-16 or 31-40
½ to ¾ Pound Lobster, raw or pre-steamed, chopped into chunks (3 to 4 small lobster tails will do)
½ to ¾ Pound Lump Crab, your choice
Nonstick Cooking Spray, optional

INSTRUCTIONS:

Note: Store bought lobster that has been steamed/precooked along with your choice of lump crab meat works great for this recipe.

Prepare, chop, and dice all of the ingredients first. Grate all of the cheeses and toss together in one large bowl.

Season the shrimp and lobster with Grand Diamond All Purpose Seasoning. Set aside.

Preheat oven to 350 degrees

In a large stock pot, bring 3 quarts of water to a boil over high heat. Season the boiling water, with 3 Tablespoons of salt. Cook until just al dente or 2 minutes short of the suggested cooking time on the package. Once done, drain the pasta, DO NOT rinse, and toss with 1 or 2 tablespoons of olive oil or vegetable oil to keep it from sticking together while the sauce is being cooked.

Preheat the milk and half & half together in the microwave, about 3 to 4 minutes. Next, in a large skillet melt the butter and olive oil together over medium-high heat. Add the onions and sauté for about 3 to 4 minutes or until soft. Add and stir in the flour, cook for about 2 minutes. (This is a roux. Do not brown it.) Add the chopped garlic and thyme, cook for another minute. Next, while whisking vigorously add all of the milk mixture to the roux. Whisk until the sauce is smooth and has no lumps. Once it's smooth, turn the heat down to medium heat. Add the salt, pepper, Grand Diamond All Purpose Seasoning, hot sauce, and optional liquid crab boil to taste. Simmer for about 5 to 8 minutes or until the sauce has thickened. Whisk occasionally to keep it from sticking.

Next, add 3 cups of the grated chesses to the sauce (reserve 4 cups for layering), turn off the heat and stir just until the cheese melts and the sauce is combined. Stir in the drained pasta.

This is another one of those recipes I'd been dreaming of making for quite some time. I'm pretty sure last year I planned on making it once or twice but it never happened and eventually I forgot about it. This year I had intended on making a lobster dish or two over the summer, but yeah… that didn't happen. I got this particular idea stuck in my head again and couldn't let it slide. It had to be made. I wanted to make it. So I had just had a baby…I didn't care, it wouldn't stop me. Making a pasta dish couldn't possibly be that labor intensive. Plus, I had a special occasion I really wanted to make it for… our 7th wedding anniversary!

The Mr is a big fan of seafood and I'm not, so we never eat it at home. The least I could do is make something special for him on our special day. I wrote up my plan and made a list of what ingredients I needed to pick up… oh plus those needed for the special anniversary dessert which you'll have to wait to see. I promise it'll be worth the wait.

My biggest issue was figuring out what to do about the lobster meat. Do I buy a live lobster and cook it myself? Do I buy a lobster and have whoever I'm buying it from cook it for me? Do I even need a whole lobster? Would the tail be enough? Oh but what about just finding meat ready to go? And then what about where to get it… do I just go to the grocery store or do I find a fish market? You see… since I'm not a fan of seafood I clearly haven't ever purchased lobster myself, forget the issue of preparing it! In the end I ventured into a local fish market, hoping for the best and hoping to not make a complete fool of myself. I was able to pick up lobster meat ready to go. That made my life SO much easier.

Since the only issue was the lobster, and in the end it wasn't even an issue, the rest was a piece of cake! Seriously easy and from what I was told, definitely delicious. If you love lobster… and of course mac n cheese, then this is a must try. It could certainly be made and eaten any day, but sometimes a dish like this deserves a special occasion. Who says Tuesdays or any other day of the week aren't special occasions though? ;) I'd be happy to help justify any day as a special occasion for you if you need to.

Ingredients:

  • 2 tbsp butter
  • 2 tbsp flour
  • 1C half and half
  • 1C sharp cheddar cheese
  • 1C Gruyere cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp cayenne
  • 1/8 tsp dry mustard
  • 1/2lb favorite pasta
  • 1/2lb lobster meat

Directions:

Ultimate Lobster Mac And Cheese

Preheat oven to 350 degrees. Cook pasta as directed on the packaging or per your liking. Meanwhile in a double boiler over medium heat, melt butter. Add flour and stir to combine. Carefully pour in half and half, stir and let sit for 3-4 minutes. Add handfuls of shredded cheese to warm mixture, stirring occasionally. Continue adding cheese slowly until it has all been added to the double boiler. Season and continue to stir occasionally. Prepare cooked lobster meat by chopping into pieces no larger than bite size, set aside.

Drain pasta and transfer to a large bowl. Pour cheese mixture over pasta. Stir to coat well. Toss lobster in and stir to disperse meat throughout.

Divide pasta among individual oven safe dishes or one large dish. Bake for 15-20 minutes or until cheese is bubbly. Serve warm.
